An Introduction
Half the world’s habitable land is used for agriculture and food accounts for 26% of global carbon emissions; it’s also estimated that two-thirds of food produced is wasted.
Food also accounts for 70% of global freshwater withdrawals and an astonishing 94% of the mammal biomass (excluding humans) is livestock. By adjusting our diets, even if only for part of the time, can contribute greatly to reducing carbon emissions, conserving water and protecting biodiversity.
